The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Syrup: Place the listed components inside a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. After that, turn off the heat allowing it to cool down fully. Decant to a sealable bottle, cap it and store in the refrigerator, where it will keep for about four weeks.

To make Premix: Combine all the spirits and syrup into a big jug, let it rest for one hour, then pass it through preferably using a fine cloth, so it's completely strained.

When ready to serve: Measure 85ml from the premix into your stirring glass filled with ice, gently stirring lightly for one minute to chill. Strain into a chilled martini glass or similar, decorate with a few cranberries and complete it with a brief mist with the mandarin essence above the glass.
